So, it’s getting to the end of Summer, and you’re probably getting Potlucked out. AND you’re probably tired of bringing the same thing/eating the same thing at some of them. I usually bring dessert, but lately, everyone’s last minute go to is to buy dessert on the way. SO lately, my go to has been a BLT Pasta Salad. I mean I love the normal Italian dressing-y pasta salad, but.. bacon makes everything better, right?! I started off with this recipe from Recipe-Diaries: BLT Pasta Salad. I made a couple changes, but this is such an easy recipe that it can be done ahead of time. You’ll love it!!
What You’ll Need:
- 1 lb Pasta, cooked al dente
- 12-16 oz Cherry Tomatoes, Cut in half or quarters
- 1 package of Bacon, Fried Crispy and broken apart
- 1-2 Head of Romaine Lettuce, Cut into a quarter inch thick chiffonade
- 1 TSP Sugar
- 2 TSP Apple Cider Vinegar
- ½ Cup Fat Free Mayonnaise
- ⅓ Cup Greek Yogurt
- 1 TBSP Dijon Mustard
- Salt and Pepper
Step 1: Make the Salad Dressing
In a medium bowl, mix together the sugar, apple cider vinegar, fat free mayonnaise, greek yogurt, and dijon mustard. Add salt and pepper to taste.
Step 2: Combine Everything Together
You can probably do this a number of ways, but I like to mix the bacon (reserve a little for garnish), lettuce, and tomato into the pasta first so you a better mixture of the ingredients. Add and mix in the dressing a little at a time until you get the consistency you want. Sprinkle the reserved bacon on top. Enjoy!
